1)PRODUCT DESCRIPTION
are prepared from sound, properly ripened fruit which has been washed, mechanically peeled, cored, cut to desired size and tunnel dried to remove the greater portion of moisture to produce a semi-dry texture. The product is sulpfured sufficiently to retard discoloration, and is inspected throughout the process to comply with good commercial practices, yielding a clean, wholesome product which meets all standards for human consumption, including compliance with provisions of Food Safety Regulation.
2)PHYSICAL
A. color shall be reasonablly uniform and characeristics of the varieties.
B. flavor shall be sweet to tart, typical of the variety, and free from off flavors.
C. defects- the produce shall be reasonably free of defects as defined by the FSR grades of dried apples.
D. sizes - this product is available in:

3)CHEMICAL
A. moisture content shall range within 20-23%.
B. sulfur dioxide content shall range 400-600ppm for EU and 1200-1500ppm for USA and AUSTRILIA.
C. for natural apples (unsulfured) - moisture 18-20% and no sulfur.
4)PACKAGING
prodcut shall be packed into corrugated carton cases containing 10 or 20 kilos.
5)STORAGE
Best: 32- 40 degrees F
Good: 40- 60 degrees F
Not recommended: over 80 degrees F
6)APPLICATIONS
Fillings, pastries, snacks, nutrition bars, cookies, cereals, dry mixes, granola, apple butter, trail mixes. Alternative to fresh, frozen or canned apples.
